Simple Dinner Pasta

Ingredients Recipe
  1. Fill Pot with Water.
  2. Add pinch of salt and olive oil.
  3. Add desired amount of pasta.
  4. Place one segment of butter into each bowl being served.
  5. Add a small amount of pasta water to the butter to melt it.
  6. Remove water from pot.
  7. Serve with any desired toppings.




Carbonarra (According to Food Network)

Ingredients Recipe
  1. Fill Pot with water.
  2. Add salt and boil water.
  3. Whisk eggs, yolks, Parmesean, Pecorino, pepper, and butter until combined.
  4. Cook Pasta, save 1 Cup of water.
  5. Cook the Pancetta in a skillet until crisp.
  6. Add pasta and the remaining water to the skillet.
  7. Add egg mixture and stir until creamy.
  8. Serve




Fresh Spaghetti (from my Great Grandmother's Old Cookbook)

Ingredients Recipe
  1. Pour flour on pastry board. Make a well in the center. Add the egg(s) and beat them in the well.
  2. Add salt and oil to the eggs. Mix the egg mixture and flour by drawing flour in with the fork.
  3. Gather all of the dough into a ball and clean off the dry dough flour (to avoid marring the pasta)
  4. Knead and stretch the dough by folding it over itself. After 15 minutes, the dough should be uniform. Add a small amount of flour if needed to prevent the dough from becoming sticky.
  5. Cover the dough with an upside-down bowl. Let the dough rest for 30 minutes.
  6. Roll the dough out into a thin disk with a rolling pin. Flour to prevent sticking.
  7. Roll out the dough radially to thin the dough more, flip dough over during rolling. Alternatively, use a pasta roller to form the dough.
  8. Once the dough is less than 1 millimeter thick, and nearly translucent, cut or use a pasta machine to create desired shapes. In the case of spaghetti, cut into thin strands, or use a pasta roller to create the spaghetti.
  9. Cook for a short amount of time in boiling water.
  10. Serve however desired.
